Sandra Busse, Quality Management Specialist at Erbacher Food Intelligence, explains the process: “The process begins with an appointment with the certification body. On the agreed day, an auditor visits us to check whether all the requirements are met.” Documents such as delivery notes and invoices are inspected, both at the goods-in and goods-out stages. Complete traceability of ingredients is essential, as is the control of mass balance. In addition to document checks, a tour of the production and storage areas is also on the agenda. “This ensures that all processes are carried out correctly and that no prohibited substances or methods are used,” says Busse.
